The "average" shotglass holds about 1 1/2 ounces, but there are glasses with the same size and shape that hold as little as 7/8 of an ounce and as much as two ounces by varying the thickness of the glass at the bottom and at the sides -- check out www.libbey.com for their selection of barware. Unless you "know" a glass, it can be hard to guess how much it holds.
Some glasses come with measuring lines (also available in different sizes and with lines at different levels from Libbey) and that is how "beginner" bartenders know how much liquor they are using.
The "pros" use bottles with pourers added to the top. The pourers regulate the flow, so it doesn't matter how full the bottle is, how quickly you flip the bottle, or any other factor. They determine how much they have poured by the amount of time they hold the bottle upside down -- it takes a little practice, but is not hard to do. (some pourers have a built in measure, but that's cheating :)
Get yourself a glass with a line on it, or add a line at the 1 1/2 ounce mark, get a bottle (preferably empty so you can practice with water) and a pourer, and start practicing!
